HEALING chicken & CAULIFLOWER soup with anti-inflammatory goodness

 

Soulful and nourishing, this Chicken and Cauliflower Soup is made with a traditional homemade chicken bone broth, which is wonderfully nutrient-rich and packed with anti-inflammatory goodness. It is so delicious and good for you that your body will crave it morning, noon and night!

First, make the nutrient-rich chicken broth, then the soulful soup. It’s a little bit of work, but completely worth it. Delicious, warming and thankfully nourishing.

bone BROTH Ingredients

  • 1 whole chicken

  • Water (volume depends on pot size but usually around 4+ litres)

  • 1/2 kg chicken wings/necks (optional but worth it!)

  • One large parsnip

  • One large carrot

  • One celery stick

  • Splash of vinegar

bone BROTH METHOD

  1. Place all ingredients (except chicken wings) in a pressure cooker or large pot with a lid

  2. Cover with water

  3. Cook for 1 hour in the pressure cooker or 1.5 -2 hrs in the pot

  4. Remove the chicken meat and place aside for the soup

  5. Add bones back into the pot and 1/2kg of chicken wings/necks

  6. Top up with water and cook for 1 hour then strain

  7. Keep a few litres of broth for the soup, and place any leftover broth in the fridge (cool first)

 

CHICKEN & CAULIFLOWER SOUP Ingredients

  • Cooked chicken (approx. 100g per serving, but use as much as you like)

  • Chicken broth (approx 2-2.5 litres for 6 large serves)

  • 3 cups of cauliflower florets

  • 2 carrots diced

  • 1 onion diced (or garlic/onion infused olive oil to make it low fodmap)

  • 3 cloves garlic (see above for low fodmap)

  • 1 tsp turmeric

  • 1 tsp fresh-ground black pepper

  • 1 tbsp grated ginger

  • Olive oil

CHICKEN & CAULIFLOWER SOUP METHOD

  1. Saute onion, garlic, ginger, turmeric, black pepper, cauliflower and carrot in a large saucepan

  2. Add chicken stock (approx 2-2.5 litres for 6 large serves)

  3. Cook for 5-7 minutes until vegetables are soft

  4. Add roughly chopped, cooked chicken (approx 100g per serving)

  5. Season to taste and serve

* Use any leftover chicken and broth for a quick snack or easy lunch.
